Feeling Chili??

I love Chili! It is so fitting when the air is getting crisp and you want to just cuddle on the couch with a big ol' bowl of it. One of my favorite chilis to make is my White Chicken Chili.

Here's the recipe!

White Chicken Chili Ingredients:
3 tbsp olive oil
1 medium onion
1 green bell pepper
1 can of green chilis or 1 serrano pepper (depending on how spicy you like it)
3 tbsp flour
2 tbsp cumin
1 packet McCormick's White Chicken Chili Seasoning packet (optional)
1 24oz Chicken Broth
2 cans White beans
1 lb cooked chicken breast






Start out by heating your olive oil -- Add your onion, bell pepper, and chiles or serrano pepper. Cook for 4 minutes. Then add your flour, cumin, and seasoning packet. Cook for 2 minutes, it will turn very thick. Next, add your beans and chicken broth. Stir really well and bring to a boil. Then add your cooked chicken breast. Simmer and serve.

My favorite toppers are shredded Monterrey Jack cheese and sour cream!

***I usually bake my chicken in the oven with some olive oil, salt, and pepper til done. Then shred.***

It is big pot of yumminess!

  3. Lenora, I tried it and it was great! Denver gives it a 10. The only thing different I did was make a bag of white beans, we had those for dinner and then I used the beans to make the soup the next night. Worked out great and I think next time we might make it a little hotter. We have enough for us both to have lunch for two days too!
